BANANA, PEANUT BUTTER & JAM CAKE

Recipe by Pamella at SpamellaB Whip up this morning tea delight! Made with bananas, delicious peanut butter, and refined sugar-free jam, this treat goes nicely with a warm cuppa. Entertain with this dish or cut it into smaller pieces and take some with you to work. There's nothing better than sweet pick-me-up at 3pm. Ingredients

BASE:

2 Bananas

50 g Natvia

100 g Rolled oats

80 g Oat flour

1 teaspoon Cinnamon

1 teaspoon Baking powder

2 tablespoon Peanut butter

TOPPING

4 tablespoon Natvia Strawberry Fruit Spread or jam of choice

4 tablespoon Peanuts, chopped

Method

  1. Preheat the oven to 180 degrees C and grease and line a 15cm round cake tin (loose-bottomed if possible).
  2. Place the ingredients for the base in a blender until smooth and quite a thick batter. Spoon this into the cake tin and spread out evenly.
  3. Spread the jam over the top to cover then scatter over the peanuts. Bake for 25-30 minutes (cover with tin foil after 10 minutes to prevent burning!) until firm and a skewer inserted comes out clean. Leave to cool.
  4. Remove from the tin, slice into 4-6 and serve!
