Classic Vegan Choc-Chip Cookies

This Gooseberry, Vegan Choc-Chip Cookies are deliciously sweet, aromatic, and flavourful. A sure crowd-pleaser and definitely one to try with your friends and family! This simple and easy recipe is not only healthier with no added sugars but are amazing in taste!    

Serves: 10

Prep: 15 minutes

Cook/Chill: 12-18 minutes

Ingredients

1 cup buckwheat flour

1 cup oat flour

1/4 cup sweetener

1 tsp baking powder

Pinch salt

3 tbsp coconut oil melted

2 tbsp apple sauce

1/4 cup aquafaba

1 tbsp pure maple syrup

1 tsp vanilla

Dash plant based milk (gradually add to make dough consistency)

1 block dark chocolate chopped

Enjoy!

Method

  1. Preheat oven to 170 degrees
  2. Add dry ingredients (except choc) in a bowl and mix together
  3. Add the wet ingredients and thoroughly combine
  4. Add dark chocolate, stir then use your hands to form a dough. Add a splash more milk or apple sauce if too dry
  5. Roll 1tbsp of dough per cookie and place on a lined baking tray
  6. Bake for around 12-18 minutes until golden and cooked through
  7. Allow to cool & enjoy!
