Blueberry Buckwheat Pancakes

Ingredients

  • 1/4 cup/25g Oat flour
  • 1/4 cup/25g Buckwheat flour
  • 2 tsp psyllium powder
  • 1 heaped tsp Maca powder
  • 3/4 cup/180ml Unsweetened Almond Milk
  • 1 tbsp/14g Natvia
  • 1/2 tsp Baking soda
  • 1/2 tsp Apple Cider vinegar
  • 1/2 tsp Vanilla Extract

Method

  1. Blend all ingredients in a blender until smooth.
  2. Cook in some coconut oil over medium heat.
  3. Add some fresh blueberries to each pancake whilst cooking
