INGREDIENTS

  • 330 g Self-raising Flour (3 Cup)
  • 90 g Natvia (1/2 Cup)
  • Pinch of Salt
  • 2 teaspoons Cinnamon
  • 3 Small Mashed Bananas
  • 1 Egg
  • 250 g Milk (1 Cup)
  • 1 tablespoon Milk
  • 45 mls Light Tasting Olive Oil
  • Topping:
  • Whipped Cream
  • Sliced Banana
  • Cinnamon

METHOD

  1. Preheat the oven to 170C
  2. Combine the flour, Natvia, salt and cinnamon in a mixing bowl.
  3. In a separate bowl combine the remaining ingredients.
  4. Pour the wet ingredients over the flour and mix in with a spatula until just combined.
  5. Dollop into a greased 12 x 1/3 cup muffin tin. Bake for 20-25 minutes, or until cooked.
  6. Remove from the oven and stand on a wire rack to cool.
  7. Top with cream, banana and cinnamon.
