INGREDIENTS

  • 3 large eggs
  • 1/4 cup organic almond or coconut milk
  • 1 large mashed banana
  • 2 cups almond meal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup Natvia
  • 0 pinch of salt
  • 1 teaspoon vanilla essence
  • 1.5 cups chopped walnuts
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon Natvia
  • 2 tablespoons melted butter

3 large eggs

1/4 cup organic almond or coconut milk

1 large mashed banana

2 cups almond meal

1 tsp baking powder

1 tsp ground cinnamon

1/4 cup Natvia

pinch of salt

1 tsp vanilla essence

1 + 1/2 cup chopped walnuts

1/4 tsp ground cinnamon

1 tbsp Natvia

2 tbsp melted butter

METHOD

  1. Add 3 large eggs to a mixing bowl, along with 1/4 cup of almond milk (or coconut milk).
  2. Whisk the ingredients until combined.
  3. Add the single large mashed banana and continue to whisk until combined.
  4. Add 2 cups almond flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1/4 cup Natvia, 1 tsp vanilla essence, and a pinch of salt and continue to whisk until combined.
  5. Add 1/2 cup chopped walnuts, and mix the walnuts into the mixture evenly. Set the mixture aside.
  6. Add 1 cup chopped walnuts to a seperate mixing bowl, along with 1/4 tsp ground cinnamon, and 1 tbsp Natvia.
  7. Mix these dry ingredients together, then top with 2 tbsp of melted butter. Mix the butter in well.
  8. Spoon the batter into muffin cups evenly and scoop the topping onto the tops of the muffins.
  9. Bake at 180°C for 20 - 25 mins.
