Basic Sugar Free Vanilla Cupcakes

INGREDIENTS

  • 1 1/2 cups Plain Flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 Large eggs at room temperature
  • 2/3 cup Natvia
  • 170g Unsalted butter softened
  • 2 tsp Pure vanilla extract
  • 1/2 cup Milk

 

Servings: 12 cupcakes

METHOD

  1. Preheat the oven to 180ºC and line a muffin tin with cupcake liners.
  2. Mix together the flour, baking powder and salt in a medium bowl.
  3. In a separate bowl, beat the butter until light and fluffy, then add Natvia and cream together.
  4. Add the eggs one at a time while beating.
  5. Slowly add the half of the flour mixture while beating. Then add the milk, followed by the rest of the flour. Beat to combine, but don't overmix.
  6. Divide mixture between the cupcake tins and bake for 18 to 20 minutes until cooked. Cool in tin for 10 minutes, before removing from the tin and cooling completely on a wire rack.
