Beetroot Hummus

Cook: 15 minutes

Ingredients

1 tablespoon cumin

4 Baby beetroot, roasted & skinned

3 cloves garlic, diced

400 g tinned chickpeas, washed and drained

60 g lemon juice (¼ cup)

1 teaspoon lemon zest

1 teaspoon Natvia

1 tablespoon tahini

2 tablespoon Olive oil

Salt & pepper to taste

1 tablespoon dukkah

Method

  1. Dry roast the cumin on a fry pan and grind in a mortar and pestle
  2. Blitz all the ingredients in a food processor until smooth. Add a little extra salt and pepper to taste.
  3. Place in a bowl and sprinkle with dukkah. Enjoy
