Berries and Cream Pancakes

Ingredients

Pancakes:
  • 1/2 cup rolled oats
  • 1 tbsp coconut flour
  • 1/2 each Banana, sliced
  • 3/4 cup combination of coconut cream and coconut water
  • 1 tsp Natvia
  • 1/2 tsp Baking soda
  • 1/2 tsp Apple Cider vinegar
  • 1/2 tsp Vanilla Extract
Berry Compote:
  • 1 cup/120g/4.2 oz frozen strawberries
  • 1/4 cup/37g/1.3 oz Frozen Blueberries
  • 1 tsp Natvia
  • 1/4 cup/60ml/2 oz Coconut water more as needed

Method

  1. Starting with the Pancakes, blend all ingredients in a blender until smooth.
  2. Cook over medium heat in some coconut oil.
  3. Making the Berry Compote, simmer al ingredients for 10 minutes stirring occasionally until broken down and thickened to desired consistency.
  4. Pour over pancakes
  5. Drizzle over some more coconut cream. Top with some additional chopped fresh strawberries and your favourite fruits. Enjoy!
