Almond and Pine Nut Jam Drops

These Almond Pine Nut Jam Drops are super quick to whip up, totally delicious and are also gluten-free, low carb. and diabetic-friendly! Made with tasty almonds and infused with almond essence, this nutty dish is sure to be a crowd pleaser!

Ingredients

39 g Pine nuts (1/4 cup)

75 g Slivered almonds (1/2 Cup)

150 g Almond meal (1 Cup)

3 tablespoon Natvia

Pinch of salt

2 tablespoon Butter, melted and cooled

1 Egg white

0.5 teaspoon Almond essence

Natvia Strawberry Spread

Method

  1. Combine the dry ingredients in a mixing bowl. Add the butter, egg white and almond essence and stir until combined.
  2. Roll into balls and place on a baking paper lined tray. Make an indent in the middle of each cookie with your thumb. Bake for 15-20 minutes, until golden brown. Remove from the oven and place on a wire rack to cool.
  3. Fill the indents of each cookie with some of the Natvia Strawberry Spread.
