Almond, Blueberry, and Chocolate Chip Blondies

Ingredients

160 g Natvia (3⁄4 Cups)

150 g Self-raising Flour (1 Cup)

220 g Coconut Oil (melted) 1 Cup

1 Egg

2 tablespoon Vanilla

1 tablespoon Salt

85 g Dark Chocolate Chips (1⁄2 Cup)

75 g Slivered Almonds (1⁄2 Cup)

50 Blueberries (1⁄2 Cup)

Method

  1. Pre-heat oven to 170 degrees C and grease/line a shallow tin-set to one side. Whisk eggs and Natvia in a bowl until well combined.
  2. Add remaining wet ingredients and mix.
  3. In a separate bowl mix all dry ingredients and slowly add the dry to the wet ingredients, mixing as you do this. Pour mixture into tin and even out well.
  4. Bake for 45-50 minutes; checking after 40 minutes. Remove from the oven and leave to cool in the tin for 1 hour, then remove and leave to cool completely on a wire rack.
  5. Store in an airtight container for up to 3 days.
