ANZAC Biscuits

Cooking Time: 15-20 minutes

Ingredients

105 g 1 cup rolled oats

80 g 1 cup desiccated coconut

25 g ¼ cup quick oats

1 teaspoon cinnamon

110 g 3/4cup wholemeal flour

150 g butter

1 teaspoon vanilla essence

90 g ½ cup natvia

1 teaspoon bicarb soda

Method

  1. Preheat oven to 170C
  2. Combine the oats, coconut, cinnamon and flour in a bowl
  3. Melt the butter in a saucepan over low heat with the Natvia. Add the vanilla. Pour into the oats mixture. Combine the bicarb with 1 tbs boiling water and then stir through. Add 1-2 tbs water if it does not stick together.
  4. Roll into tablespoon sized balls and place on a baking tray. Bake for 12-15 minutes until golden. Remove and stand for 5 minutes before removing to a wire rack to cool
