Banana and Coconut Bars

This recipe is part of our Back To School collection. When it comes to school snacks - quick, easy, and healthy recipes are key, and this recipe ticks all of those boxes! Get the kids in the kitchen to help whip up their school treats. Bars are super convenient to eat in the schoolyard so we'll know they love baking and eating these up!

Cook: 25 - 30 minutes

Ingredients

  • 2 ½ cups rolled oats
  • 1 -2 tbs Natvia
  • 1 ¼ cup desiccated coconut
  • ¼ vegetable oil
  • 1 tsp vanilla essence
  • 1 egg, lightly beaten
  • 2 bananas, mashed

Method

  1. Preheat the oven to 180C
  2. Combine dry ingredients and stir to combine
  3. Combine wet ingredients and stir to combine. Stir wet ingredients through dry until thoroughly combined
  4. Spoon into a greased and lined square slice tin
  5. Bake for 25 minutes until golden brown
  6. Remove and stand for 20 minutes. Remove from the tin and cool on a wire rack for 1-2 hours
  7. Slice and share
