Choc-Chip Cookies

Lauren is a Melbourne based dietitian and nutritionist. A healthier take on an old favourite. With added antioxidants and monounsaturated fats thanks to the added extra virgin olive oil, Natvia Sweetener reducing the sugar content and calories, and oats to increase their fiber content. This recipe doesn’t compromise the flavour of delicious choc chip cookies to be a healthier option. Great for an afternoon treat to keep you full until dinner! Ingredients

0.75 cup rolled oats

1 cup plain flour

1 teaspoon bicarb soda

1 egg

0.33 cup Natvia Sweetener

0.25 cup butter, softened

0.25 cup extra virgin olive oil

1 teaspoon vanilla

1 cup dark choc chips

Method

  1. Preheat oven to 180C
  2. Line two baking trays with baking paper
  3. Blend the oats up in blender or food processor until a coarse flour consistency is made
  4. Stir the flour, bicarb, and oats together in a medium bowl
  5. Whisk the butter until light and fluffy
  6. Add the oil, Natvia, vanilla and egg and whisk until well combined
  7. Fold in the flour until combined and a dough forms
  8. Add the choc chips and fold through
  9. Roll the dough into little balls and place on the tray, spread apart because the dough will increase in size while baking. Press each ball down with a fork
  10. Bake in the oven for 10-15 minutes until slightly golden in colour
  11. Let cool before eating, or else they may crumble to pieces
  12. Enjoy!
