Choc-Chip Cookies

Ingredients
0.75 cup rolled oats
1 cup plain flour
1 teaspoon bicarb soda
1 egg
0.33 cup Natvia Sweetener
0.25 cup butter, softened
0.25 cup extra virgin olive oil
1 teaspoon vanilla
1 cup dark choc chips
Method
- Preheat oven to 180C
- Line two baking trays with baking paper
- Blend the oats up in blender or food processor until a coarse flour consistency is made
- Stir the flour, bicarb, and oats together in a medium bowl
- Whisk the butter until light and fluffy
- Add the oil, Natvia, vanilla and egg and whisk until well combined
- Fold in the flour until combined and a dough forms
- Add the choc chips and fold through
- Roll the dough into little balls and place on the tray, spread apart because the dough will increase in size while baking. Press each ball down with a fork
- Bake in the oven for 10-15 minutes until slightly golden in colour
- Let cool before eating, or else they may crumble to pieces
