CHOC DATE STUFFED PROTEIN MUFFINS

Ingredients
DRY INGREDIENTS:
1 cup buckwheat flour
1/2 cup almond meal
1/3 heaped cup cacao powder
2 heaped tbsp flax meal
1 tsp baking powder
4x tbsp choc protein powder
1 tsp mushroom powder
2 tbsp Natvia Brown Sweetener
2 tbsp of cinnamon
WET INGREDIENTS:
1 cup almond milk (add more if needed)
2 tsp apple cider vinegar
1/4 cup apple sauce
DATES:
3 medjool dates pitted and stuffed with PB
FROSTING:
1 block of Natvia Dark Baking Choc Block melted
Splash of almond milk
Method
- Preheat oven to 180 degrees & line a muffin tray
- Add dry ingredients to a mixing bowl and stir together
- Add wet ingredients to a seperate bowl and whisk together. Gradually add wet ingredients to the dry. Stir together
- Add roughly 1-2 tbsp of batter to each muffin
- Chop dates in half and stuff each muffin
- Place in the oven bake for around 15-18 minutes until golden
- Allow to cool and firm
- Stir together melted dark choc & almond milk until thick like frosting
- Top each muffin & enjoy!
