Chocolate Heart Cakes: A Sweet Potato Surprise

Prepare to fall in love with a unique and delightful dessert that's both scrumptious and secretly healthy. These Chocolate Heart Cakes are as charming as they are delicious, and they feature a surprise ingredient - sweet potatoes.

Ingredients:

  • 1 large sweet potato, peeled, cooked, and cooled
  • 1 flax egg or regular egg
  • 100ml oat milk
  • 1 teaspoon vanilla extract
  • 100g gluten-free flour
  • 30g cocoa powder
  • 100g Natvia natural sweetener
  • 1 teaspoon baking powder

For the drizzle:

  • 4 tablespoons Natvia zero icing sugar
  • A few drops of red food coloring
  • Dried rose petals

Instructions:

  1. Begin by placing the cooked sweet potato, egg (or flax egg), oat milk, vanilla extract, gluten-free flour, cocoa powder, Natvia natural sweetener, and baking powder in a blender or food processor. Blend until the mixture becomes thick and smooth.

  2. Spoon the thick mixture into four small silicone heart molds, filling each to the top.

  3. Bake at 180°C for about 20 minutes, or until the heart cakes have risen and firmed up. Let them cool.

  4. Carefully pop out the cooled heart cakes onto a wire rack.

  5. Now, prepare the drizzle by mixing together the Natvia zero icing sugar with a few drops of red food coloring and 1-2 tablespoons of water until it reaches a drizzle-like consistency.

  6. Spoon the colored drizzle over each heart cake and add a touch of elegance by sprinkling dried rose petals.

  7. Set the cakes aside for at least 20 minutes to allow the drizzle to set, and then you're ready to enjoy this unique, delightful treat.

These Chocolate Heart Cakes are a delightful blend of sweetness and healthy goodness, perfect for a special occasion or whenever you're craving a charming dessert. Enjoy!
