Christmas Chia Jam

- 2 cups Mixed berries
- 1 tsp vanilla extract
- 2 tsp all spice
- 1 tsp lemon zest
- 2 ½ tbs chia seeds
- ¼ cup Natvia
- juice of 1 small lemon
- Place the berries, vanilla, spices and lemon zest in sauce pan and bring to medium heat. When tender mash the berries with a potato masher.
- Add the chia seeds, lemon juice and Natvia stirring thoroughly and bring to boil before simmering for 10-15 minutes.
- Spoon into sterilized jars and cool completely. Store in the refrigerator for up to 2 weeks.
