Diabetic-Friendly Anzac Biscuits

Ingredients
105 g Rolled oats (1 Cup)
80 g Desiccated coconut (1 Cup)
26 g Quick oats (1/4 Cup)
1 teaspoon Cinnamon
54 g Wholemeal flour (1/3 Cup)
150 g Butter
1 teaspoon Vanilla essence
95 g Natvia (1/2 Cup)
1 teaspoon Bi carb soda
Method
- Preheat oven to 170C
- Combine the oats, coconut, cinnamon and flour in a bowl.
- Melt the butter in a saucepan over low heat with the Natvia. Add the vanilla. Pour into the oats mixture. Combine the bicarb with 1 tbs boiling water and then stir through. Add 1-2 tbs water if it does not stick together
- Roll into tablespoon sized balls and place on a baking tray. Bake for 12-15 minutes until golden. Remove and stand for 5 minutes before removing to a wire rack to cool
