Easy Christmas Pudding

Serves: 8 - 10
Ingredients
300 g mixed dried fruit
500 g milk (2 cups)
2 tablespoon cinnamon
1 tablespoon vanilla bean paste
1 teaspoon allspice
160 g plain flour (1 cup)
60 g breadcrumbs (½ cup)
60 g almond meal (½ cup)
1 g baking powder
95 g Natvia (½ cup)
100 g butter, melted
Method
- Combine the fruit with ¾ of the milk, vanilla and spices. Soak for 1 hour or overnight.
- Combine the remaining ingredients in a bowl and then stir through the fruit mixture. Stir through the butter
- Pack the mixture into a pudding steamer and place in a large saucepan of simmering water – ensure that the water comes up to half way on the steamer. Cover – using aluminum foil if needed and steam for 3 hours – adding more hot water as needed
