Love You YoYos

Ingredients
- 125g unsalted Butter, softened
- ½ cup Natvia
- ½ teaspoon rose water (optional)
- ½ teaspoon vanilla essence
- 1 cup Plain Flour
- 1 tablespoon Cornflour
- 1 tbs raspberries
- 60g butter, softened
- 1 tbs raspberries
Method
- Preheat oven to 160C
- Beat butter, vanilla and Natvia until light and fluffy.
- Sift over the flour. Beat briefly until combined.
- Roll out the dough to about 3 cm in height and cut into love hearts with a floured cookie cutter. Place on lined cookie sheet.
- Bake for 10-12 minutes. Remove from the oven and cool for 5-8 minutes before transferring to a wire rack to cool completely.
- To make the filling microwave the raspberries for 30 seconds, then mash until smooth. Stand in the refrigerator for 10-15 minutes until cool. Beat butter until light and fluffy. Beat in raspberries and Natvia until combined.
- Make the YoYo’s by sandwiching two heart cookies together with the filling. Keep in a cool place.
