Love You YoYos

Cook: 25 - 30 minutes

Ingredients

  • 125g unsalted Butter, softened
  • ½ cup Natvia
  • ½ teaspoon rose water (optional)
  • ½ teaspoon vanilla essence
  • 1 cup Plain Flour
  • 1 tablespoon Cornflour
  Filling
  • 1 tbs raspberries
  • 60g butter, softened
  • 1 tbs raspberries

Method

  1. Preheat oven to 160C
  2. Beat butter, vanilla and Natvia until light and fluffy.
  3. Sift over the flour. Beat briefly until combined.
  4. Roll out the dough to about 3 cm in height and cut into love hearts with a floured cookie cutter. Place on lined cookie sheet.
  5. Bake for 10-12 minutes. Remove from the oven and cool for 5-8 minutes before transferring to a wire rack to cool completely.
  6. To make the filling microwave the raspberries for 30 seconds, then mash until smooth. Stand in the refrigerator for 10-15 minutes until cool. Beat butter until light and fluffy. Beat in raspberries and Natvia until combined.
  7. Make the YoYo’s by sandwiching two heart cookies together with the filling. Keep in a cool place.
