NATVIA Cherry Ripe

225 g 1 cup cherries, pitted
90 g ¼ cup raspberries
160 g 2 cups desiccated coconut
50 g ¼ cup Natvia
2 tablespoon coconut cream
1 teaspoon vanilla bean paste
300 g dark chocolate
1 tablespoon coconut oil
- Place the cherries, raspberries, desiccated coconut, Natvia, coconut cream and vanilla in a food processor and blitz until smooth. Press into a lined loaf tin and freeze for 1 hour.
- Melt the chocolate and stir in the coconut oil until melted
- Slice the frozen coconut and cherry mixture into 9-12 even pieces
- Dunk these in the melted chocolate and place on a piece of baking paper. Drizzle excess chocolate over each one to create lines over each. Leave for 20 minutes or until set.
