Peanut, Almond and Chia Bars

Ingredients

  • 2 ½ cups rolled oats
  • 1 -2 tbs Natvia
  • ½ cup desiccated coconut
  • 1/4 cup pepitas
  • 2 tbs chia seeds
  • ¼ almonds, chopped
  • ¼ cup vegetable oil
  • 1/3 cup natural peanut butter
  • 1 tsp vanilla essence
  • 1 egg, lightly beaten
  • 1 banana. mashed

Method

  1. Preheat the oven to 180C
  2. Combine dry ingredients and stir to combine
  3. Combine wet ingredients and stir to combine. Stir wet ingredients through dry until thoroughly combined
  4. Spoon into a greased and lined square slice tin.
  5. Bake for 25 minutes until golden brown
  6. Remove and stand for 20 minutes. Remove from the tin and cool on a wire rack for 1-2 hours
  7. Slice and share
