Diabetic-Friendly Peanut Butter Tahini Cookies

Perfect with a cup of tea or coffee, these Peanut Butter and Tahini Cookies are absolutely delicious. This recipe was made diabetic-friendly, and vegan!

Ingredients

2 tablespoon natural peanut butter

2 tablespoon tahini

2 tablespoon Natvia

90 g wholemeal pastry flour

Method

  1. Preheat oven to 180C
  2. Beat together the peanut butter, tahini and Natvia until light and creamy
  3. Add the flour and stir to combine with a spatula.
  4. Roll into balls, shape into crescents and place on a lined oven tray.
  5. Bake for 12-15 minutes.
  6. Remove from the oven and stand for 2 minutes before carefully placing on a wire rack to cool.
