Ingredients

150 g Pine nuts (1 Cup)

2 tablespoon Raw almond butter

120 g Almond meal (1 Cup)

2 tablespoon Natvia

0.5 teaspoon Vanilla bean paste

Pinch of salt

1 Egg

Method

  1. Preheat the oven to 160C
  2. Place 2 tbs of pine nuts, the almond butter and Natvia in a food processor and process until fairly smooth. Alternatively place in a mortar and pestle and crush until smooth-ish.
  3. Add the remaining ingredients and combine until you have a soft, sticky dough.
  4. Roll into heaped teaspoon-sized balls. Press and roll into the pine nuts and then place on a baking paper lined tray.
  5. Bake for 15-20 minutes, until golden brown. Place on a wire rack to cool completely.
