Protein Cookie Dough Bars

Servings 8-12 depending on size
Ingredients
1 can chickpeas 1 1/2 cups/375ml/12.6 oz dairy free milk 1 cup/90g/3 oz oat flour 1 cup/90g/3 oz vegan protein powder (can be substituted with more oat flour) 1/3 cup/60g/2 oz Natvia (more or less to taste) 2 tsp vanilla extract 1/2 cup/90g/3 oz chocolate chips (vegan if desired)
Method
- Blend together chickpeas, stevia, vanilla extract and dairy free milk in a food processor until relatively smooth.
- Add in oat flour and protein powder gradually whilst blending. Add more oat flour or dairy free milk if it's too wet or dry. Mixture should resemble consistency of very thick cookie dough.
- Add in chocolate chips and mix in by hand.
- Press into baking tin lined with cling film. Set in the fridge for a few hours or overnight.
- Cut into squares and serve!
