Raw Apple Cake

Refrigerate: 4 hours
150 g natural cashews (1 cup )
2 apples, grated
130 g sunflower seeds (1 cup)
100 g coconut oil (½ cup)
1 teaspoon cinnamon
2 tablespoon Natvia
80 g desiccated coconut (1 cup)
- Soak the cashews in hot water for 15 minutes. Drain and rinse.
- Combine all the ingredients in a food processor and process until smooth.
- Press into a greased and lined cake tin. Sprinkle with extra desiccated coconut and cinnamon, cover and refrigerate for 4 hours or overnight.
