Salted Caramel Truffles

Ingredients
10 Medjool Dates, Pitted
75 g Raw Nuts, Macadamia Or Almonds (1/2 Cup)
1 tablespoon Melted Coconut Oil
2 tablespoon Natvia
.25 tablespoon Salt
Melted Dark Chocolate For Coating (Optional)
Method
- In a blender or high powered food processor, combine all ingredients bar the dark chocolate.
- Blitz until a smooth paste forms. Using a tablespoon to measure, scoop out mix and roll into ball. You may find that wetting your hands makes this easier.
- Place truffles on a plate and place into the freezer for 15-30 minutes to firm. Eat as is, or dip in melted dark chocolate and sprinkle with extra salt.
