TOFFEE APPLE MUFFINS

100 g Gluten-free flour
100 g Ground Almonds or Almond Flour
100 g Natvia
75 g Dried Apple Pieces
1 teaspoon Cinnamon
1 teaspoon Baking Powder
200 mls Milk of choice
1 Egg, beaten
2 tablespoon Almond Butter
1 teaspoon Vanilla Extract
2 tablespoon Almond Butter or Tahini
2 tablespoon Natvia Natural Sweetener
2 tablespoon Milk of choice
0.5 teaspoon Cinnamon
- Preheat the oven to 180C and place 6 muffin cases into a muffin tin.
- Mix together the flours, sweetener, dried apple, cinnamon and baking powder in a bowl.
- Whisk together the milk, egg, almond butter and vanilla and pour into the mixture. Stir well to combine then divide between the muffin cases to reach the top. Bake for 15-20 minutes until risen, golden and firmed up then leave to cool.
- Mix together the almond butter or tahini with the Natvia, milk and cinnamon to form a slightly runny sauce then drizzle over each cooled muffin. Sprinkle over extra dried apple pieces and some granola if you wish. Enjoy!
