Valentine's Love Letters

This recipe is part of our Valentine's Day collection. It's been said the way to a partner's heart is food, so why not surprise them with a romantic Valentine's Day message while you're at it. We've got the cutest little recipe that is sure to make your special one smile. Combining a delicious shortbread base with Nuttvia's tasty, refined sugar-free hazelnut choc spread, decorate these mini cookies with a message of love. Prep: 10 minutes

Cook: 25 - 30 minutes

Ingredients

  • 250g unsalted butter, softened
  • 1 cup Natvia
  • ½ teaspoon vanilla essence
  • 2 cups Plain Flour, plus extra
  • 2 tablespoon Cornflour
  Filling

Method

  1. Preheat oven to 180C
  2. Beat butter, vanilla, and Natvia until light and fluffy.
  3. Sift over the flour. Beat briefly until combined.
  4. Roll out the dough to about 3 cm in height and cut into circles with a floured cookie cutter. Separate half of the circles and cut out letters with alphabet cookie cutters. Place on lined cookie sheet.
  5. Bake for 10-12 minutes. Remove from the oven and cool for 5-8 minutes before transferring to a wire rack to cool completely.
  6. Slather a plan circle cookie with Nuttvia, or jam and then place a letter cookie on top.
