Video: Sugar Free Blueberry Coconut Truffles!

Recipe:
Ingredients
1 cup shredded coconut
½ cup freeze dried blueberries
½ cup Natvia
¼ tsp pink sea salt
1/3 cup melted coconut oil
1/3 cup sugar free maple syrup

To coat
dairy free choc chips
extra blueberries

Method
Combine all ingredients in a bowl and freeze for 10 minutes. Roll mixture into round balls and put back in the freezer for another 10 minutes.

Melt the choc chips in the microwave. Set up a wire rack with some baking paper or kitchen paper underneath to catch the drips. Dip each ball in the melted chocolate and set on the rack.

Add a sprinkle of extra blueberries and you’re done! Store the truffles in the fridge or freezer. Enjoy!
