INGREDIENTS

  • 105 g rolled oats (1 cup)
  • 160 g plain wholemeal flour (1 cup)
  • 80 g self-raising flour (½ cup )
  • 95 g Natvia (½ cup)
  • 40 g desiccated coconut (½ Cup)
  • 70 g light tasting extra virgin olive oil
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla bean paste
  • 225 g pitted cherries (1 cup )

 

 

METHOD

  1. Preheat oven to 180C
  2. Combine the dry ingredients
  3. Add the olive oil, eggs, vanilla and cherries and stir until just combined
  4. Spread into a greased and lined 15x20cm brownie tin
  5. Bake for 20-25 minutes. Remove from the oven and stand in the tray until cooled completely. Slice into 12 squares
