Cherry Cinnamon Oat Slice

Cooking Time 20-25 mins

Ingredients

105 g rolled oats (1 cup)

160 g plain wholemeal flour (1 cup)

80 g self-raising flour (½ cup )

95 g Natvia (½ cup)

40 g desiccated coconut (½ Cup)

70 g light tasting extra virgin olive oil

2 eggs, lightly beaten

1 teaspoon vanilla bean paste

225 g pitted cherries (1 cup )

Method

  1. Preheat oven to 180C
  2. Combine the dry ingredients
  3. Add the olive oil, eggs, vanilla and cherries and stir until just combined
  4. Spread into a greased and lined 15x20cm brownie tin
  5. Bake for 20-25 minutes. Remove from the oven and stand in the tray until cooled completely. Slice into 12 squares
