Chia and Coconut Protein Pancakes

There’s nothing better than waking up to a fresh batch of pancakes. They’re the perfect weekend treat!

The great thing about pancakes is you can completley change how they taste just by topping them differently. Some people enjoy lemon and salt, others strawberries and for the chocolate lovers, Nuttvia is a sure bet.

We’ve packed these pancakes full of nutrition so you can enjoy your breakfast pancakes guilt-free!

INGREDIENTS

1 tbs chia seeds

¾ cup spelt flour

1 scoop(30g) protein powder

1 tbs vegetable or olive oil

1 cup + 1 tbs coconut milk

1 tbs Natvia

Blueberries

Greek yoghurt

Blueberries

METHOD

  1. Combine all the ingredients in a bowl and whisk to combine. Place in the fridge for 20 minutes.
  2. Heat a pan to medium high, lightly greasing with coconut oil or margarine. Cook 1/3 cup batches of batter for 2-3 minutes, or until the edges start to darken and bubble dot the surface then flip and cook for a further 1 minute. Repeat with remaining batter
  3. Top with greek yoghurt and blueberries
