Chia Pudding

Start your day off with a nutritious chia pudding. Chia seeds are one of the most nutritious foods out there. They're high in healthy omega 3-fatty acids, fibre, protein and are a source of magnesium, iron and zinc! These small seeds pack quite the punch and it's why you should try and find ways to include them into your diet. Smoothies, over your breakfast cereals, in your salads, mixed in with your rice - there are so many ways to do it. One of ours is to make them the star of their very own dish - Chia Pudding! Makes: 1 1/2 Cups

Ingredients

1 1/4 Cups almond milk 2 Tsps Natvia 1 Tsp Vanilla bean paste 1/3 Tsp ground cinnamon 1/4 Cup black chia seeds Sliced strawberries and chopped pistachios, to serve

Method

  1. Whisk together milk, Natvia, vanilla and cinnamon in a medium bowl. Add chia seeds. Whisk until combined. Cover.
  2. Refrigerate, stirring once or twice, for at least 6 hours, or until seeds have absorbed milk and become soft and jelly-like.
  3. Serve in small jars or bowls topped with strawberries and pistachios.
