CHOCOLATE BEETROOT CAKE

INGREDIENTS

  • 1/2 cup butter
  • 1/3 cup dark sugar free chocolate chips
  • 3 eggs
  • 1.25 cups Natvia
  • 1/3 cup milk of choice
  • 2 cups raw beetroot, peeled and coarsely grated (about 2 medium beetroot)
  • 1.5 cups plain flour
  • 2.5 teaspoons baking powder
  • 1/4 cup cocoa powder

1/2 cup/125ml/4.1 oz butter

1/3 cup/60g/2 oz dark sugar free chocolate chips

3 eggs

1 1/4 cup/225g/7.9 oz  Natvia

1/3 cup/80ml/2.6 oz  milk of choice

2 cups/250g/8.4 oz raw beetroot, peeled and coarsely grated (about 2 medium beetroot)

1 1/2 cups/225g/7.9g  plain flour

2.5 tsp  baking powder

1/4 cup/25g/0.8 oz cocoa powder

METHOD

  1. Preheat oven to 170°C and grease a cake pan.
  2. Melt butter and add chocolate, stirring until completely melted. Set aside.
  3. Whisk eggs until light and fluffy then add Natvia and mix until combined.
  4. Add butter mixture and mix until combined.
  5. Add milk and mix until combined.
  6. Add remaining ingredients and mix until combined.
