CHOCOLATE COCONUT MUFFINS

INGREDIENTS

  • 0.66 cup nonfat milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup light olive oil
  • 2.25 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 3.5 teaspoons baking powder
  • 0.66 cup Natvia
  • 1/2 cup unsweetened desiccated coconut

2/3 cup/160ml/5.3 oz nonfat milk

2 eggs

1 tsp vanilla extract

1/2 cup/120ml/4.2 oz light olive oil

2 1/4 cup/337g/11.8 oz whole wheat flour

1/2 cup/45g/1.5 oz cocoa powder

3.5 tsp baking powder

2/3 cup/120g/4.2 oz Natvia

1/2 cup/45g/1.5 oz unsweetened desiccated coconut

METHOD

  1. Preheat oven to 180°C and line 12 cupcake cups with liners.
  2. Whisk together eggs, vanilla extract, milk, Natvia and olive oil.
  3. Whisk in flour, cocoa powder, and baking powder, until completely combined.
  4. Fold in coconut.
  5. Divide between cupcake liners and bake for 15-20 minutes until a toothpick comes out clean.

      Could we use brown rice flour or coconut flour? What quantities would it be? Thank you

        Hi Pia,
        You could use either, replace the flour in the same quantity. Gluten free flours tend to be denser, so add an extra 1/2 teaspoon or so of baking powder and increase the milk by a quarter of a cup or so. Hope this helps! 🙂
