Chocolate Coconut Muffins

Makes 12 muffins

Ingredients

0.66 cup nonfat milk

2 eggs

1 teaspoon vanilla extract

0.5 cup light olive oil

2.25 cup whole wheat flour

0.5 cup cocoa powder

3.5 teaspoon baking powder

0.66 cup Natvia

0.5 cup unsweetened desiccated coconut

Method

  1. Preheat oven to 180°C and line 12 cupcake cups with liners.
  2. Whisk together eggs, vanilla extract, milk, Natvia and olive oil.
  3. Whisk in flour, cocoa powder, and baking powder, until completely combined.
  4. Fold in coconut.
  5. Divide between cupcake liners and bake for 15-20 minutes until a toothpick comes out clean.
