INGREDIENTS

  • COOKIE:
  • 100g oats
  • 100g gluten-free flour
  • 100g Natvia natural sweetener
  • 2 tablespoons smooth nut butter
  • 100ml oat milk
  • 1 teaspoon vanilla extract
  • FILLING:
  • 3 tablespoons smooth nut butter
  • 2 tablespoons cocoa powder
  • 2 tablespoons Natvia natural sweetener
  • 1-2 tablespoons oat milk
  • Pinch of cinnamon

METHOD

  1. Make the cookies: Place the ingredients in a blender and whizz up until the mixture comes together in a dough.
  2. Whisk together the filling ingredients until quite thick, almost like a paste.
  3. Divide the cookie mixture into 8-10 pieces, then for each one, split in half, place a small teaspoon of the filling in the middle, then arrange the other half of the cookie mixture over the top. Repeat for each one.
  4. Place on a lined baking tray and bake at 180C for 12-15 minutes until golden, then leave to cool and enjoy!
