Christmas Chia Jam

INGREDIENTS

  • 2 cups Mixed berries
  • 1 tsp vanilla extract
  • 2 tsp all spice
  • 1 tsp lemon zest
  • 2 ½ tbs chia seeds
  • ¼ cup Natvia
  • juice of 1 small lemon

METHOD

  1. Place the berries, vanilla, spices and lemon zest in sauce pan and bring to medium heat. When tender mash the berries with a potato masher.
  2. Add the chia seeds, lemon juice and Natvia stirring thoroughly and bring to boil before simmering for 10-15 minutes.
  3. Spoon into sterilized jars and cool completely. Store in the refrigerator for up to 2 weeks.
