INGREDIENTS

Dough

100g unsalted butter softened

2 cups self-raising flour

pinch of salt

1 cup milk

¼ cup cream

1 tsp vanilla essence

 

Filling

50g unsalted butter

¼ cup Natvia

2 tsp cinnamon

¼ cup pecans, roughly chopped

milk, for brushing

METHOD

  1. Combine the butter, flour and salt in a food processor and blitz until it resembles breadcrumbs.
  2. Add the milk, cream and pulse until the dough just starts to come together
  3. Knead briefly until smooth before rolling out to 30x25xm rectangle
  4. Beat the butter, Natvia and cinnamon until light and creamy. Spread over the dough. Sprinkle over ¾ of the pecans. Roll the dough up lengthways and then slice into 16-18 pieces. Place evenly on a baking paper lined tray. Brush with milk and sprinkle with extra pecans
  5. Bake for 20-25 minutes.
  6. Serve warm.
