INGREDIENTS

  • FOR THE DONUTS:
  • 100 g Gluten-free Flour
  • 100 g Almonds, ground
  • 100 g Natvia
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 100 g Baking Powder
  • 1 teaspoon Cinnamon
  • 100 g Apple Puree
  • 100 mls Milk of choice
  • 2 Eggs (can be flax eggs)
  • 50 mls Oil
  • 1 teaspoon Vanilla Extract
  • FOR THE FROSTING:
  • 250 g Soft Cheese Or Quark (can be dairy-free)
  • 4 tablespoons Natvia
  • 1/2 teaspoon Cinnamon, ground
  • FOR THE CINNAMON APPLE CRUMBLE:
  • 2 Small Apples, diced
  • 3 tablespoons Granola of choice
  • 1 tablespoon Coconut Oil
  • 1 tablespoon Natvia
  • 05 teaspoons Cinnamon

METHOD

  1. Preheat the oven to 180C and lightly grease a 6-hole donut tin.
  2. Mix together the flour, ground almonds, Natvia, cinnamon and baking powder in a bowl.
  3. Whisk together the apple puree, milk, eggs, oil and vanilla then pour into the dry ingredients and mix well to form a batter. Divide between the donut holes to reach the top and bake for 20-25 minutes until firmed up and golden. Leave to cool.
  4. Meanwhile make the frosting: Beat together the soft cheese, Natvia and cinnamon and keep in the fridge until needed.
  5. Heat the coconut oil in a small pan and add the apple pieces, granola, Natvia and cinnamon and cook over a medium-high heat for 5-10 minutes until golden and caramelised.
  6. Once the donuts have cooled, pop out and spread each one with some of the frosting then spoon over some of the apple crumble mixture over each side. Enjoy!
