INGREDIENTS

  • 105 g Rolled oats (1 Cup)
  • 80 g Desiccated coconut (1 Cup)
  • 26 g Quick oats (1/4 Cup)
  • 1 teaspoon Cinnamon
  • 54 g Wholemeal flour (1/3 Cup)
  • 150 g Butter
  • 1 teaspoon Vanilla essence
  • 95 g Natvia (1/2 Cup)
  • 1 teaspoon Bi carb soda

METHOD

  1. Preheat oven to 170C
  2. Combine the oats, coconut, cinnamon and flour in a bowl.
  3. Melt the butter in a saucepan over low heat with the Natvia. Add the vanilla. Pour into the oats mixture. Combine the bicarb with 1 tbs boiling water and then stir through. Add 1-2 tbs water if it does not stick together
  4. Roll into tablespoon sized balls and place on a baking tray. Bake for 12-15 minutes until golden. Remove and stand for 5 minutes before removing to a wire rack to cool
