INGREDIENTS

  • 280 g gluten free self raising flour, sifted
  • 177 mls almond milk (3/4 cup)
  • 1 teaspoon vanilla
  • 2 medium bananas, mashed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon bicarbonate of soda
  • 2 eggs
  • 149 g Natvia Gold (3/4 cup)
  • Pinch of salt

Nutrition tips:

This banana bread can be made ahead of time and frozen.

For a decadent dessert try this bread toasted with sugar free ice-cream and Natvia Salty Caramel Sauce

METHOD

  1. Preheat oven to 150C (fan-forced). Grease and line a rectangle loaf tin.
  2. Place flour, cinnamon, salt and bi carb soda in a mixing bowl. Stir to combine.
  3. Add the eggs, milk, vanilla and banana. Give the mixture a good stir so all of the ingredients are incorporated and you have a lumpy batter.
  4. Pour into the prepared tin and bake for 1 hour or until a skewer inserted comes out clean. Leave in the tin for 10 minutes before transferring to a wire rack to cool completely.
  5. Serve warm with butter.
