600 grams chicken thighs, skinless and boneless
1-2 cloves garlic
1 brown onion
1 red chilli
2-3 capsicums a.k.a. peppers (any colour)
2 tbsp olive oil, extra virgin, for frying
MOLE SAUCE
2 dried ancho chillies
400 grams tinned tomatoes
2 tbsp peanut butter (100% peanuts, smooth)
4 tbsp cacao powder (or unsweetened cocoa powder)
1.5 tbsp Natvia
1 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
1/2 tsp ground coriander
1/2 tsp ground cinnamon
EXTRAS
1 small bunch coriander, fresh, to garnish
rice and salad to serve alongside
sour cream or greek yoghurt to serve alongside
