Combine the fruit with ¾ of the milk, vanilla and spices. Soak for 1 hour or overnight.
Combine the remaining ingredients in a bowl and then stir through the fruit mixture. Stir through the butter
Pack the mixture into a pudding steamer and place in a large saucepan of simmering water – ensure that the water comes up to half way on the steamer. Cover – using aluminum foil if needed and steam for 3 hours – adding more hot water as needed
