Gingerbread Bundt

Get into the holiday spirit with our Gingerbread Bundt! Put together without any refined sugars, this sweet treat is a must have this Christmas season!

Ingredients

  • 2 ½ cups SR plain flour
  • 1 tsp baking soda
  • 1 ¼ cup Natvia
  • 2 tsp all spice
  • 1 tsp cinnamon
  • 3-4 tsp ginger
  • 4 eggs
  • 1 ½ cups milk
  • 250g butter, melted
  Icing
  • 200g cream cheese, softened
  • ¼ cup Natvia
50 g unsalted butter, softened
  • 1 tbs orange zest

Method

  1. Grease a 25cm bundt tin. Preheat the oven to 180C.
  2. Sift the flour into a mixing bowl. Add the remaining ingredients in a mixing bowl and whisk until smooth.
  3. Bake for 30-35 minutes. Remove from the oven and rest on the bench for 10 -20 minutes.
  4. Flip upside down and remove from the tin. Cool completely.
  5. To make the icing beat the cream cheese, orange zest and Natvia together until smooth.
  6. Pour the icing over the cake. Sprinkle with cinnamon.
