INGREDIENTS

Ingredients

  • 100g unsalted butter, melted
  • 3 cups almond meal
  • zest of 1 lemon
  • ¼ cup Natvia

Icing

  • 200ml coconut cream, chilled solid part
  • 1/3 cup coconut oil
  • 1-2 tbs lemon juice
  • ¼ cup Natvia
  • 1 cup desiccated coconut
  • lemon zest

METHOD

  1. Combine the butter, almond meal, desiccated coconut, lemon rind and Natvia in a bowl and stir to combine
  2. Press into a 20cm slice tin. Cover and refrigerate
  3. Whip the coconut cream, coconut oil and add the lemon juice, natvia and desiccated coconut. Pour over the base, cover and refrigerate overnight, or for at least 2 hours
  4. Slice into square and top with lemon zest
