Lavender-and-Lemon-Doughnuts

INGREDIENTS

Doughnut

  • 60g unsalted butter, melted and cooled
  • 1/3 cup olive oil
  • ¾ cup Natvia
  • 2 eggs
  • 2 tsp baking powder
  • 1 Lemon rind
  • 1 cup plain flour, sifted
  • 1 cup milk
  • Lavender

 

Icing

  • 1/4 Cream Cheese
  • 1/2 juiced lemon
  • 1/4 cup Coconut oil
  • 1 tbsp Natvia

Decorate

  • Lemon rind
  • Lavender sprinkle

METHOD

  1. Preheat oven to 180C
  2. In a bowl, mix the butter, olive oil, and eggs. Mix in the Natvia, baking powder, and some sprinkles of lavender.
  3. Sift in 1/2 cup of plain flour followed by 1/2 cup of milk. Stir and repeat this process with the remaining halves of flour and milk.
  4. Fill a doughnut tray with mixture and then put try into oven for 15 minutes then allow to cool.
  5. To make the icing, add cream cheese, lemon juice into a bowl and mix. Mix in coconut oil, and Natvia.
  6. Add icing to doughnuts and sprinkle with lemon rind and lavender.
