INGREDIENTS

  • 1/2 cup butter, vegan or plain
  • 0.75 cup Natvia
  • 3 eggs
  • 1.25 cups plain flour
  • 2 teaspoons baking powder
  • 0.66 cup cornmeal
  • 1 orange, zested and juiced
  • 1/2 cup finely chopped pistachios
  • 1/2 cup vegan yogurt or greek
  • 0 apricot jam, to serve (sugar free if desired) 

1/2 cup/125g/4.2 oz butter, vegan or plain

3/4 cup/135g/4.7 oz Natvia

3 eggs

1 1/4 cups/190g/6.6 oz plain flour

2 tsps baking powder

2/3 cup/100g/3.5 oz cornmeal

1 orange, zested and juiced

1/2 cup/60g/2 oz finely chopped pistachios

1/2 cup/125g/4.2 oz vegan yogurt or greek

apricot jam, to serve (sugar free if desired)

METHOD

  1. Preheat oven to 175°C and grease a cake or tart pan.
  2. Cream the butter until light and fluffy.
  3. Add the Natvia and further paddle until well combined.
  4. Slowly add in the eggs.
  5. Add the flour, baking powder, cornmeal, yogurt, orange zest, and juice and mix until well combined.
  6. Pour into prepared pan and bake for 30 minutes and it is golden brown and toothpick comes out clean.
  7. Before serving, brush with melted apricot jam and sprinkle with pistachios if desired.
