This delicious Persian Love cake is both sugar free and gluten free. It’s made with almond flour and contains a mixture of spices which is sure to activate your taste buds. It’s a quick recipe to make and the taste is absolutely delicious. We recommend to enjoy making this together with your other half and share the sweetness together.

INGREDIENTS

  • 1.5 cups almond meal
  • 0.75 cup Natvia
  • 1/2 teaspoon salt
  • 60 g unsalted butter, softened
  • 1 egg
  • 125 g Greek yoghurt, plus extra to serve
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons shelled pistachios, roughly chopped

1 and 1/2 cups of almond meal

3/4 cup Natvia

1/2 teaspoon salt

60 grams unsalted butter, softened

1 egg

125g Greek yoghurt, plus extra to serve

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon of ground cardamom

2 tablespoons shelled pistachios, roughly chopped

METHOD

  1. First, preheat the oven to 180C. To prepare, get a round baking tin land line up with baking paper.
  2. Combine the almond meal, natvia and a pinch of salt in a medium sized bowl. Add in the butter and rub the mixture together with your fingers until it resembles breadcrumbs
  3. Spoon half a mixture from the bowl into a lined round baking tray and flatten evenly
  4. Add cardamon, nutmeg, cinnamon, egg and yoghurt to the remaining mixture and combine until smooth
  5. Pour rest of mixture on top of the original mix and smoothen. Sprinkle chopped pistachios around the edges
  6. Bake at 180 for 30 minutes until golden brown and a skewer comes out clean when poked into the centre.
  7. Allow to cool slightly before removing from pan and serve with more pistachios and greek yoghurt.
