1 Cup Uncooked Quinoa
1/2 tsp Cinnamon
1/2 tsp Mixed Spice (All purpose spice)
1/3 Cup Desiccated Coconut
1/3 Cup Sultanas
1/4 Goji Berries
1/4 Cup Natvia
1 tbsp Chia Seeds
1/4 Cup Pistachios – chopped
1/4 Cup Walnuts – chopped
1/3 Cup Coconut Oil – Melted
2 Eggs – beaten
2 Cups Milk of your own choice

I made this and it was delicious! A bit soggy but first time baker so I am sure it is something I did. If I was to make this vegan, what can I substitute egg with?
Hi Diane, glad you enjoyed it! You can remove the egg from the recipe and it will taste more like a quinoa bar rather than a morning breakfast slice. Add a bit of coconut oil if the mixture is too dry, or add banana if you don’t mind the combination 🙂
