Raw Apple Cake

INGREDIENTS

  • 150 g natural cashews (1 cup )
  • 2 apples, grated
  • 130 g sunflower seeds (1 cup)
  • 100 g coconut oil (½ cup)
  • 1 teaspoon cinnamon
  • 2 tablespoons Natvia
  • 80 g desiccated coconut (1 cup)

METHOD

  1. Soak the cashews in hot water for 15 minutes. Drain and rinse.
  2. Combine all the ingredients in a food processor and process until smooth.
  3. Press into a greased and lined cake tin. Sprinkle with extra desiccated coconut and cinnamon, cover and refrigerate for 4 hours or overnight.
