INGREDIENTS

Base
1 Cup Ground Almonds
1⁄2 Cup Natvia
1⁄2 Cup Coconut Oil- melted
Pinch Salt

Filling
200g Low Fat Cream Cheese
60g Greek Yoghurt
2 Tbsp. Natvia
1 Tsp. Vanilla
150g Fresh Raspberries

METHOD

  1. Prepare 3 small cake tins by coating them with a little coconut oil- leave to one side.
  2. Combine all base ingredients in a bowl and mix well- it will form a crumbly like mixture.
  3. Divide the mixture evenly between the 3 cake tins and press them down firmly to form a base.
  4. Pop in the fridge to chill whilst you make the cheesecake filling.
  5. Add all filling ingredients EXCEPT the raspberries into a small blender/mixer and mix for 1 minute.
  6. Crush 2/3’s of the raspberries with a fork and add to the mixture- mix for a few seconds.
  7. Pour the mixture on top of each base making sure they are even.
  8. Pop in the fridge and chill until ready to serve- a minimum of 4 hours.
